Spelt is an ancient grain that traces its heritage back long before many wheat hybrids. It has a rich, nutty flavor and a smoother texture, containing a "balanced" protein made up of all eight of the essential amino acids your body requires. Spelt products are more easily digested than wheat and consequently place less stress on the body. Chances are if you have a low gluten sensitivity that you will process spelt just fine due to the fact that it is an ancient grain and has never been genetically modified.
